Dietary Patterns And Acculturation Among Latinos Of Mexican Descent

This study investigates the degree of retention and/or abandonment of traditional Mexican dietary practices, and adoption of new ones in the United States. With a more cultural approach, researches assessed patterns of food consumption rather than the number and amount of nutrients provided by the diet. More than 160 traditional Mexican foods and U.S. foods were included in the study and prevalence of diabetes and obesity was also assessed. The study found a decline in the consumption of traditional foods, new ways of utilizing traditional foods and the adoption of new foods among participants. Overall, there were some healthful and some non-healthful dietary changes.
