The growing population of limited English proficient individuals in the United States poses a substantial challenge to traditional nutrition education efforts. Although the limited education and economically disadvantaged status of some of these recent immigrants and refugees would make them ideal candidates for nutrition and health education, the methods often used to reach the general population are ineffective with this group because of barriers of language and culture. This text has been created in an effort to reach these hard to serve individuals, and serves to teach beginning-level English while it introduces basic nutrition and health concepts.
